2 lb ground beef, browned and drained
1 onion, cut finely
1 lb cheddar cheese, shredded
pickles, cut finely
20 - tortillas (fajita size)
Brown ground beef and drain. Steam the tortillas in the microwave in a covered bowl with a damp paper towel. Heat for a few minutes until they are soft and warm, not hot. Remove from container one at a time and spread a few tablespoons of beef, followed by 1 teaspoon onion and pickle, a squirt of ketchup and mustard, and a large pinch of cheddar cheese. Fold up burrito style and place in a single layer in 9x13 inch pan. Continue until all 20 tortillas are complete and the pan is full. Bake for 7 minutes in a 350F oven. Serve warm.
