Gamma's Pecan Sandies

Cookies are not my thing. Actually that is not entirely true. I should say that if I am eating them they are definitely my thing. It is the baking that I am not crazy about, and until a few years ago this has not been a problem as my mother-in-law enjoyed the Christmas tradition of making cookies. After she passed away, I had to step up to the plate and make sure my family enjoyed this home made treat. I am lucky that she left a well stocked recipe box and the following recipe was one of my favorites. It is titled Butter Cookies but I think they should be called Pecan Sandies.




After baking them as per her handwritten instructions, I got fancy. I melted a bit of bittersweet chocolate and added a few tablespoons of butter. I dipped 1/2 of each cookie in this chocolate and then sprinkled with nuts. The contrast of the sweet cookie and sharp chocolate was a perfect match, and yet, they are marvelous just as she made them. Enjoy!




Gamma’s Pecan Sandies

2 sticks butter
1 cup sugar
1 egg
2 cups flour
1/4 teaspoon salt
1 teaspoon vanilla
1 cup ground pecans


Cream butter and sugar until fluffy, incorporate egg. Flour, salt, vanilla and pecans. Drop by teaspoonful onto cookie sheets and bake at 350F for 13 minutes. Note: Due to the large amount of butter, the edges will burn if baked on Teflon coated cookie sheets. In that case reduce the oven temperate to 300F and bake longer.
