Sweet Potato Rolls with Honey Butter

This is a recipe is greatly adapted from Sweet Potato Mini Loaves at Lauren's Latest, which is a great website.  She made these into small loaves and spread orange cinnamon honey butter on them.  I decided to make them into crescent rolls and used only butter and honey.  My family declared their love for these rolls while with their mouths full.  If you don't like sweet dinner rolls I would cut the honey in half.  Otherwise these are divine.  Enjoy!


Sweet Potato Rolls with Honey Butter

1 cup warm water
1/4 cup + 1 teaspoon granulated sugar
3 teaspoons yeast
2/3 cup mashed sweet potato, cooked
1 egg
1/4 cup melted butter, cooled
3/4 teaspoon salt
1/2 teaspoon cinnamon
3 1/2 - 4 cups bread flour

Butter and Honey Spread
6 tablespoons butter
4 tablespoons honey (1/2 for less sweet dinner roll)
*Melt butter and stir in honey.  Let cool a bit before using.

Add warm water, 1 teaspoon sugar, and yeast to medium bowl.  Let sit to proof for five minutes.  Meanwhile mash potato and butter together.  Add potato and butter mixture to yeast, along with the remaining sugar and egg.  Add salt and cinnamon and flour, 1/2 cup at a time until dough is ready to knead.  Pour dough out on floured surface and knead until elastic.  Place in oiled bowl and cover with plastic wrap.  Set in warm draft free location and allow to double in size, about 75 minutes.  Punch down, and knead a few times.  Roll into round shape about 1/8 inch thick.  Spread butter and honey mixture on dough.  Use pizza cutter or knife to cut into sixteen triangle shaped pieces.  Roll each triangle, starting with the fat end.  Place on lightly greased cookie sheet and allow to rise for 30 minutes.  Bake in 350F oven for 14 minutes.
