Pound Cake Cookies

I remember a few years ago when I tasted my first Lofthouse cookie.  My tastebuds were very pleased with the experience and they influenced me to purchase more of these fluffy delights, whenever they were on sale.  This pound cake cookie is just as sweet and fluffy, and it melts in your mouth.  It is definitely a cake cookie that can be easily decorated for Christmas.  I topped them with sprinkles and candied cherries, but pecans would be another great option.

This recipe was adapted from my mother-in-law's recipe box and it is quite easy to make.  If you are planning to bake with your children this Christmas this is an excellent cookie to make.



Pound Cake Cookie


2 sticks butter
1 cup sugar
2 egg yolks
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour


Cream butter and sugar.  Add egg yolks, vanilla and flour.  Roll into balls the size of large marbles and place on un-greased cookie sheets.  Use fork to flatten.  Alternately, after making into balls flatten one side into sprinkles, or press flat with a cherry into the center.  Then place on sheet to bake at 350F for 12 minutes.
