Warm Tomato and Bacon Pasta Salad

This recipe is so easy to make and the pan used for frying the bacon can be re-used to make corn bread.  The bacon grease lends extra flavor to the bread.  I like to boil the pasta while the rest of dinner is being cooked.  I paired it with the Butterflied and Roasted Chicken recipe and while the chicken was in the oven I boiled the pasta and sautéed the onions and bacon.  Everything was ready at the same time and a side of fresh broccoli makes a complete meal.  My children really enjoyed this salad, so I'd call it kid approved.  The corn bread recipe will be posted tomorrow  Enjoy! -Savannah


Warm Tomato and Bacon Pasta Salad

16 oz box elbow pasta
6 oz bacon, sliced small
1 small onion, chopped
1 - 12 oz can of petite stewed tomatoes
1/4 Greek salad dressing
1 teaspoon oregano
1/4 cup grated parmesan cheese

Boil the pasta as directed on the box.  While the pasta is cooking brown bacon and onion in a 9 inch cast iron skillet.  When browned remove bacon and onions from pan leaving the drippings behind.  Drain pasta and add bacon, onion, tomatoes, dressing, oregano and cheese to elbows.  Stir to combine well.  Cover to keep warm until ready to serve.
