Feature Friday - Pumpkin Pancakes with Buttermilk Syrup

In honor of National Pancake Week, I am reposting my favorite pancake recipe, and linking up others for this Feature Friday.  If you have a pancake recipe that you enjoy please link it up below.

I hate it when I use a recipe that only calls for 1/2 of a can of something.  This is exactly what happened last week when I made the pumpkin sheet cake.  So, this morning as I was deciding what to make for breakfast the can of pumpkin in the fridge caught my attention.

After deciding to make pumpkin pancakes I realized that we didn't have any syrup.  Kinda like having the peanut butter and no jelly or the bagels and no cream cheese.  Its just how things are in my kitchen...house...life.

A recipe for Buttermilk Syrup saved the day and we ended up having a feast of a breakfast. 

Hope you enjoy the recipes. They both come from Allrecipes and I only altered the syrup slightly.



Pumpkin Pancakes
Original recipe found from Allrecipes.


1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil
2 tablespoons vinegar
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt


In a bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine.  Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Buttermilk Syrup

1 1/2 cups brown sugar
3/4 cup buttermilk
1/2 cup butter
1 teaspoon baking soda
2 teaspoons vanilla extract

In a saucepan, stir together the sugar, buttermilk, butter, and baking soda. Bring to a boil, and cook for 7 minutes. Remove from the heat, and stir in the vanilla.

Thanks for sharing, we are going to make this in a few minutes! I've been making lots of pumpkin stuff and have some left over pumpkin in the fridge - perfect timing for reading your post :)
