Baked Chicken Breasts with Fried Potatoes and Garlic Green Beans and Blog Hop




Sometimes I really enjoy cooking basic everyday food.  It just makes me feel good, and generally speaking my kids are more likely to eat it.  The exception to that rule would be my youngest boy.  He thinks basic food is good, but unusual expensive food is wonderful.  He loves to ask for sushi on his birthday.


Tonight I based my recipe for the chicken and potatoes on an America's Test Kitchen show I watched a few weeks ago.  Since I am going by memory I cannot claim it is the same way they prepared it, or that it will taste as good.  I assembled the green beans and the potatoes while the chicken finished cooking in the oven.  Also, I used freshly ground black pepper in all of these recipes.  I believe the meal would have been quite bland without it.  This is a base recipe...feel free to add your favorite seasonings.  I think dill would be a great addition to the potatoes.


The best part of this meal is that it is super easy and is ready to eat in 40 minutes.


Baked Chicken Breasts


4 bone-in chicken breasts 
1 tablespoon olive oil
salt and peper to taste
Boar's Head Deli Dressing or your favorite Italian dressing


Preheat the oven to 400F.


Heat oil in large skillet.  I used an electric skillet and heated it to 375F.  Cut the ribs off of the breasts and pat dry.  Sprinkle with salt and pepper.  When the oil is heated place breasts in oil, skin side down.  Cook until well browned (on this side only) and then transfer to oven proof pan, browned side up.  I used a 9x13 inch pan.  Bake in oven until internal temperature reaches 160F.  Be careful with the smaller breasts, as they will be finished cooking first.  I removed 2 breasts early and then the others cooked another 7 minutes.  Lightly sprinkle with Boar's Head Dressing before serving.


Fried Red Potatoes


1 1/2 pounds red potatoes
1 tablespoon olive oil
salt and pepper to taste


Clean and cut potatoes into quarters.  Add to microwave dish and toss with salt, pepper and olive oil.  Cover and cook for 5 minutes.  Stir, return cover, and continue cooking another five minutes.  Heat non stick skillet on medium high to high.  I used an electric skillet and set it to 375F.  Pour potatoes into skillet and place with flat side down.  In other words. not on the skin side.  Allow to brown, about five minutes and then flip to brown the other side.  Remove from heat and lightly sprinkle with Boar's Head Deli Dressing or other italian dressing.


Green Beans with Garlic


1 medium onion, chopped fine
4 cloves garlic, minced
1 tablespoon olive oil
2 cans green beans
salt and pepper to taste


Saute onions until translucent.  Add garlic and continue cooking for a minute.  Add green beans and when heated sprinkle with salt and pepper.  Do not over cook or stir after adding beans.  This will result in mushy broken green beans.
