The ingredient that makes this crisp different? Lays Potato Chips
I used Lays Original the first time I created this recipe, but it was even better the second time when I used Lays Salt and Vinegar variety.
If you have ice cream it would be the perfect addition.
I'm thankful for blueberries...and potato chips...life's small pleasures.
Redneck Blueberry Crisp
(printer friendly version)
2 1/4 cups all-purpose flour
1 1/2 cups brown sugar
1 teaspoon cinnamon
1 cup potato chips, crushed into small but not fine chips
(Lays Salt and Vinegar offered the most flavor)
1 pint blueberries or enough to cover the bottom of the baking pan evenly
2 tablespoons lemon juice
2 sticks butter, melted
Cover the bottom of 9x13 inch baking pan with blueberries and drizzle with lemon juice. Mix flour, sugar, cinnamon, and chips in small bowl. Sprinkle this mixture evenly over the blueberries. Gently dribble the butter over topping. Place in 350F oven and bake 30-35 minutes or until brown and bubbly.
