These ar the perfect summer dessert bar. The crust has coconut in it and the topping is creamy with a tropical mango flavor.
Mango Cream Cheese Bars
Crust -
1 1/2 cups all-purpose flour
1/2 cup confection sugar
3/4 cups butter
1/2 cup shredded coconut
Mango Filling -
2 - 8 oz packages cream cheese
2 eggs
1/3 cup lemon juice
1 cup milk
3/4 cup sugar
2 mangoes - peeled and cubed
Blend all of the crust ingredients in a food processor and press into the bottom of a lightly greased 9x13" pan. Bake at 350F for 18 minutes or until browned.
Blend the filling until smooth. Pour over baked crust and return to 350F oven for 30 minutes or until the filling is set.
*If you do not have a processor you can use a pastry blender to incorporate the butter into the flour.
