I didn't have all the ingredients for this recipe, but I did have three bananas that were quite dark on my counter. So, I adjusted and at the last minute added a 1/2 cup of cocoa. The result, due to the small amount of sugar, was a very rich and dark chocolate banana bread. For the original and far more healthy version click here.

Chocolate Chocolate Chip Banana Bread
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cocoa
6 tablespoons vegetable oil
1/2 cup brown sugar
3 medium-sized ripe bananas
3/4 cups of milk
1 teaspoon vanilla extract
1/2 cup unsweetened coconut flakes
1 cup of pumpkin seeds
1 cup semi-sweet or dark chocolate chips
Preheat your oven at 350 degrees. In a large bowl, sift together the flour, baking powder, baking soda, cocoa, and salt. Set aside. Using an electric mixer, cream together the oil and sugar. Add in the bananas, the milk and vanilla. Mix for another 2 minutes. The batter should be smooth. Next, add in the dry ingredients, one tablespoon at a time, mixing well before adding the next. Fold in the chopped nuts, chocolate chips and the coconut flakes. Bake for 75 minutes in a greased loaf pan or until a toothpick inserted in the middle of the loaf comes out clean.
