This is great served with baked chicken. I used Virginia Brand Vidalia Onion Vinegarette Salad Dressing, but you can use your favorite sweet onion dressing or a poppy seed dressing of your choice. Either way this is a cool and refreshing pasta salad.
Cantaloupe and Cucumber Pasta Salad

1/2 cantaloupe cubed
2 cucumbers peeled and cubed
2 tablespoons fresh chopped parsley
2 celery stalks, minced
1 tablespoon fresh chopped dill
1 sweet onion finely chopped
16 oz conchiglie (small shell) pasta, cooked al dente
1/2 cup Vildalia Onion Vinegarette Salad Dressing (may also use poppy seed dressing)
salt to taste
Combine all ingredients in large bowl and allow to rest for a few hours before serving.
