Stacked Bean Burrito
1 tablespoon olive oil
1 clove garlic, minced
1/2 teaspoon chili powder
1/2 teaspoon salt
1 can kidney beans
1 can black beans
1/4 cup salsa
2 cups chopped lettuce
1 tomato chopped
1 onion chopped
1/2 cup cabot low fat sour cream
1/2 cup low fat cabot sharp cheddar cheese
Heat olive oil and garlic in skillet. Cook over medium heat for 1 minute until garlic becomes aromatic. Add chili powder and salt, heat for 2 more minutes. Pour in beans and water. Cook for 10 minutes, stir occasionally and add a few tablespoons of water if beans begin to stick. Remove from heat, mash beans with the back of a fork, and then add salsa.
Heat tortillas, add bean mixture and top with toppings. Roll and serve.
May also be eaten as a salad without a tortilla.
