Okay, so I totally failed to post any healthy recipes this week. That is largely due to the fact, that in order to cook I have to go to the grocery store. Oh, how I hate that chore. So, we have been cleaning out the refrigerator and the cupboard. Today Bloodhound broke down and did a grocery run for me. Do you think he was hungry? I will commence cooking tomorrow and post the winning recipes soon.

Chicken and Rice Casserole
Chipotle Bean Burritos
Vegetable Soup and Whole Wheat Bread
Chicken and Apple Sausage
My goal is to eat lean meats and beans in my main courses in order to lose some weight. The beans offer fiber which helps regulates blood sugar and makes me feel full longer. Roasted vegetables and salad, each tossed with a slight bit of olive oil, will serve for side dishes. I want to keep my fat consumption low but I do need some, so olive oil is healthy and a great choice.
In the summer I like to eat healthy salads. During the winter, soups are high on my diet menu. If I stay away from cream based soups they are satisfying and low in fat. To make them hearty I add lots of vegetables and beans.
