Gobble Gobble Soup

If you like vegetable beef soup you’ll enjoy my turkey soup.  It is full bodied and hearty.  To keep this dish lean you will need to purchase ground turkey breast.  Do not use ground turkey.   There is a large difference in the fat content between these two.

Turkey Soup

1 ground turkey breast
1 medium onion, diced
3 celery stalks, diced
2 garlic cloves, diced
8 oz fresh mushrooms, cubed
5 cups chicken broth
1 bay leaf
1 teaspoon oregano
2 teaspoons basil
1 teaspoon parsley
2 teaspoons salt
1 teaspoon black pepper
1 can diced tomatoes
1 can corn
1 can peas
3 tablespoons worcestershire sauce
3 carrots, cubbed
4 med potatoes, cubed
Brown the turkey with the onion, celery, garlic, and mushrooms in soup pot. Add remaining ingredients and cook over medium heat for 35 min or until the carrots and potatoes are tender. Serves 10
Nutritional Information: calories - 150, fat - 1.4g, carbohydrates - 13.5g, fiber - 3g, protein - 10.6

Thanks! This is now what we'll have for dinner tonight, with buscuits. I will use turkey leftovers, though, adding them into the soup broth after sauteeing the onion, celery, garlic and mushrooms. Now I know what to do with my leftovers AND dinner is planned! Yippeee!
