Chicken and Rice Casserole

If you are looking for a remodeled and calorie conscious comfort casserole this is the perfect recipe.  You’ll think you are splurging but at 350 calories and 12 grams of fat you really aren’t.  My favorite cheese is Cabot and the 75% reduced fat sharp cheddar is very flavorful.  
Chicken and Rice Casserole

1lb chicken breast, cooked and cubed
2 tablespoons butter
12 oz fresh mushrooms, cubed
1 medium onion, chopped
3 tablespoons all purpose flour
3/4 teaspoon salt
1/8 cayenne pepper
1 1/3 cups fat free milk
3 cups cooked brown rice
1 cup low fat cheese
Saute onions, mushrooms and celery in butter until cooked, 8-10 minutes.  Stir in flour, salt and pepper.  When thoroughly mixed slowly add milk.  Bring to a boil and cook for 2 minutes.  Remove from heat and add rice, chicken, and 1/2 cup of cheese.  Pour casserole into 2 quart casserole dish that has been sprayed with cooking spray.  Sprinkle 1/2 cup of cheese over dish and bake uncovered at 325 degrees  for 30-35 minutes.
