4 tablespoons of butter
1 medium onion chopped fine
1 zucchini sliced
1/2 of med butternut squash
1 lb smoked sausage
2 tablespoons of olive oil
6 cups of cooked rice
2 lg eggs
soy sauce to taste
Melt butter in med high skillet.
Add onion and butternut squash.
Cook until squash starts to become soft.
Add zucchini and cook for 3 min.
Add chopped sausage and continue cooking until browned.
Pull vegetables and sausage to sides of skillet and add olive oil to center.
Allow to heat for 2-3 minutes.
Add rice in mound to oil in center of skillet. Leave the vegies ringing the sides of the skillet.
Every few minutes flip and stir rice to fry.
When rice is evenly cooked make a well in center of rice.
Poor beaten eggs into center.
Stir eggs occasionally to cook.
When eggs are cooked stir in rice, vegetables, and sausage from sides of pan and add soy sauce to your liking.
Remove from heat and serve.
