German Apple Pancake

I had never heard of this breakfast dish until I was flipping through an old recipe book.  I tried it and I don't even know how to explain this wonderfully unusual apple recipe.  It is a bit cakey and also a little like custard.  I encourage you to try it and make sure everyone is ready to eat when it comes out of the oven.  It is a new family favorite.

German Apple Pancake

8 lg eggs
1 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1/8 teaspoon salt
2 cups milk
4 tablespoons butter, melted
2 teaspoons vanilla
1/4 teaspoon of nutmeg
8 tablespoons butter
1 1/3 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3 large Granny Smith apples, peeled, thinly sliced
1 12 inch skillet

Combine first 6 ingredients and blend until smooth.  Add butter, vanilla and nutmeg.  Let stand 30 minutes or overnight in the refrigerator.  Preheat oven to 425F.  Melt butter in skillet and brush up sides.  Remove from heat.  Combine sugar, cinnamon and nutmeg.  Sprinkle 2/3 cup mixture in skillet.  Add apple slices.  Cover with remaining sugar mixture.  Return skillet to medium heat until bubbles form.  Pour batter over apples and bake 15 minutes at 425F.  Then reduce heat to 375F for 10 minutes.

I sent this receipe to my Mom and she made it for our Christmas brunch! It was a hit especially with my husband. His favorite pie is this was perfect. His body went in shock with all the fruit he inhaled that day! Thanks! - Amy
