Strawberry Yogurt Popsicles

This weekend I made these and my little girl adores eating them.  Only at my house could I try to take a picture of my child eating a popsicle and get a raccoon skull in the background.


Isn't that a lovely addition to my photo?  Sigh...


Anyway...back to the recipe.  My strawberries were plenty sweet enough so I just followed this recipe.  If they had been in need of sweetening I would have added some Stevia powder or honey.  I hope you enjoy watching your kids eat this healthy treat...no corn syrup or added dyes here!

Strawberry Yogurt Popsicles

2 (10 oz.) cartons frozen strawberries, thawed
1 tbsp. unflavored gelatin
16 oz. plain yogurt
12 (3 oz.) paper cups
12 wooden popsicle sticks
Drain strawberries. Place drained liquid in a saucepan and sprinkle with gelatin. Mix strawberries, yogurt, and gelatin mixture in a blender until smooth. Place cups on a tray or in a baking pan. Fill with blended mixture and cover with foil. Insert stick through foil and freeze. Run warm water on outside of cup to loosen.
