Busy Mom's Blueberry Muffins

A Busy Mom's Blueberry Muffins


1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
Mix the flour, sugar, salt and baking powder.  This can be stored in a ziploc bag until you are ready to make the muffins.
To bake muffins:
Grab a 1 cup measuring cup and add the oil and then the egg.  Fill the cup to the top with milk.
Add to dry mix.
Stir in blueberries.
Fill 12 hole greased muffin pan
Bake at 400 degree oven for 20-25 min.
Also, if you make a bunch of the dry mix in ziploc bags you can pull them out and make muffins as needed.

I forgot to tell you I made these for hubby and the children. They were devoured! Surprisingly enough, I had a few left over so hubby took some to work the next day. Actually, it's not surprising since I made a triple batch. Thanks for the yummy and easy recipe!
